burger charcuterie board

Delicious gluten free burger charcuterie board. The perfect savory snack board!

Ah, the burger. Such a classic and loved dish. While they are juicy and delicious, it's not great to be eating all that red meat. I wanted to have the burger experience without eating meat, and so we decided to make a gluten-free, vegan burger board! I'm so happy with how everything turned out and will definitely be incorporating more plant-based burgers into our meals.

This delicious burger board was made as a part of our recent cook-out. To get all the recipes from this fun meal - complete with a s'mores station - click HERE.

We discovered Beyond Burger Plant-Based Patties - so juicy and bouncy like regular burgers! My wonderful husband is also a chef and knew how to cook them just right. One of the biggest game changers? Creating a melted herb and garlic plant-based butter that was brushed onto both the burger patties and the veggie skewers. Seasoning your patties is also a must!

Let's talk about the other game changer - MARINATING YOUR SKEWERS!! I'm not talking about making the veggie skewers and then marinating them, I mean marinating the actual wooden skewers themselves. This does two things 1. Makes it so that the veggies come off the skewer easier, 2. Adds extra flavor to the veggies from the inside out. We marinated ours overnight, but you can achieve the same effect in about 30 minutes or so.

Remember, the veggies will take a little longer to cook than the burger patties, so you'll want to have the skewers on the grill at least 5 minutes before the patties. You'll also be brushing the burgers with the melted herb butter right before you put the cheese on (if you use cheese) and close the lid.

We've cooked and grilled and flipped and turned. We've melted the cheese and brushed the butter. Now it's time to assemble! May I present to you - the burger board - complete with condiments and some cannabis.

burger ingredients:

  • Gluten-free egg-free bun (if you live in the Denver area we got ours from 5280 Burger Bar)

  • Plant-Based Butter

  • Salt & Pepper

  • Garlic

  • 1 tsp Rosemary

  • 1 tsp Thyme

  • Vegan Cheese or No Cheese (or regular cheese for a vegetarian version)

  • Red Onion

  • Pickles

  • Condiments (we used ketchup and whole grain garlic mustard)

veggie skewers ingredients:

burger instructions:

Turn on grill to medium heat. Wash and dry lettuce, cut onion into thin slices. Put butter, garlic, rosemary and thyme in saute pan, allow to melt. Put in small bowl. This will be used for BOTH the burgers and the Veggie Skewers. Allow grill to heat up. Put olive oil on a rag and oil down grill.

Veggie Skewers should already be on grill 5 minutes before burgers go on grill.

Salt and pepper Beyond Patties and put on grill. Cook for two minutes then turn the patties on-half turn. Cook for additional two minutes, then flip. Repeat on other side, cooking until tender.

Brush patties with the melted herb butter mix. Butter buns and place on grill. If you're using vegan/regular cheese place cheese on burgers at this time. Close lid. Cook buns for 2-3 minutes.

Take patties and buns off, get your favorite serving board, and arrange on board with your desired condiments.

veggie instructions:

Place skewers in pan and cover with Italian dressing, allow to marinade. We marinated ours overnight, but you can achieve results in 30 minutes.

Wash and dry vegetables. Cut zucchini and squash into round 1/4 inch slices. Put mushrooms in bowl with garlic and olive oil, coat and toss thoroughly, let sit. Cut onion into thick slices, then cut slices in half. Cut bell pepper into squares.

Begin assembling your skewers. You can choose any pattern in which to put the vegetables. Season skewers and place on grill.

Cook for 5 minutes then flip. Continue process until veggies are tender, usually 10-15 minutes. During the last three minutes, brush with remaining melted herb butter mixture (see instructions under Burgers). Take off grill and serve.
